What could a guy named Jean-Georges Vongerichten know about making an authentic Mexican guacamole? If his Green Pea Guacamole sits in the fridge "for a few days", you know he's done it wrong. I can buy a pound of fresh guacamole at our big, local Mexican supermarket where the girls in the takeout section are making it up on the spot. I grab a package of warm, handmade tortillas and a big bag of fresh corn chips and head home to grill some fajitas or quesadillas. Then me and the mister scarf up all that delicious guacamole. It's usually gone before bedtime, but occasionally there a bit left to top a couple of breakfast burritos... no peas to be found, ever.
