...ghee or bacon drippings in the bottom of an iron skillet.

Medium heat, sprinkle trimmed chops with Berbere (Ethiopian spice) and salt.

Lower heat to about 3, place chops in skillet.

Soon as slightly brown, turn them.

Pour a little chicken stock over the chops, cover and simmer.

When liquid's gone, chops are ready.

Save a little juice to pour over top.

Serve with boiled yukon potatoes, boiled with pinch of Berbere and chicken stock.

When tender drain potato liquid, add a little ghee, salt, pepper, dash of berbere, serve.

Lovingly dictated by the chef (wife).

That's what this week's ingredient — the Ethiopian seasoning blend known as berbere — tastes like. ... The result is a fiery, bright-red blend that tastes equal parts barbecue, curry and Southwestern steak rub. It sounds kind of crazy, but that's a flavor combination that just begs to be in so many classic American dishes.

Berbere (Amharic: በርበሬ bärbäre, Tigrinya: በርበረ bärbärä) is a spice mixture whose constituent elements usually include chili peppers, garlic, ginger, basil, korarima, rue, ajwain or radhuni, nigella, and fenugreek. ... Berbere sometimes encompasses herbs and spices that are less well known internationally.

I like to brine mine in sea salt, lemon juice, and Walkerswood Jamaican jerk marinade. Then cook it in a cast iron skillet on the stove, then finish it in the oven. Grilling is also a great option, especially in a smoker or charcoal grill.

Who else is sharing their recipes? I've seen them baked in a casserole dish with onions, breaded and fried, marinated in pear juice and chilies, and so much more.

...one egg + 1 part milk for dipping the chicken or chop or fish, shrimp whatever...

after dipping let sit in the following for at least an hour in the breading made with

...then 6 parts wheat flour with garlic powder, salt, season-all (or similar), salt, black pepper, salt (or garlic salt), onion powder, salt (or onion salt) red pepper, salt and...

Then;

Fry in peanut oil preheated to 375 degrees Fahrenheit. Monitor heat of oil and keep as close to 350-375 degrees Fahrenheit during cooking as possible until the internal temperature at the thickest part of the chicken is at least 165 degrees.

And now the final "secret ingredient":

Add salt as needed!

On edit: Damn, that was scold-y of me. But seriously ...

I have relatives who raise pork for Niman Ranch. Much better than the mass confinement sheds that stink up Iowa and pollute the rivers.

since she mentioned slow cooker. Still sounds good.

Here's my recipe for pulled pork:

brown the pork shoulder in a cast iron skillet first.

Then put in a slow cooker with:

onions, chipotle peppers in adobo sauce, a can of cola preferably with real sugar, sea salt and fresh cracked black pepper. Low and slow for 8 hours

Agree, definitely minced garlic.

Coincidentally, we had grilled pork chops tonight. I'm going to be boring, but I like reasonably thick bone-in chops, nicely marbled with a rim of fat. And if I'm not smothering them in a garlic-onion gravy, I like them grilled with salt and plenty of pepper. My husband always brings them home perfectly, juicy, crisp, barely done, nice grilled flavor.

Btw, we've been cutting back on our meat portions, and it was interesting to realize it's changed me.
I was repelled by the thought of having to eat that whole chop in the picture. Way too much!
