i need a bit of help preparing a Thai dish

I really need your help. I am attempting to make Panagki, however, every time i try it, it turns into a disaster. What is the secret to cooking the Chicken? Do you pre-cook it and throw it into the curry paste/ coconut milk mixture, or do you let it cook in the sauce?

I'm not sure what panagki is (can't find any recipes online by that name), but if it's chicken served with a curry and coconut milk sauce, the usual routine is to sauté the chicken in a pan with some oil for several minutes until it's about 50% to 70% done, then add the coconut milk and other ingredients for the final cooking. Here are a couple recipes that use this technique (below). Hope this helps!
