My wife makes this 'do it yourself' family style.
A large wooden vat is filled with sushi rice and surrounded by plates of different types of sashimi and nori.
You grab a sheet of nori (seaweed), use a paddle to spread some rice on it, lay some materials on top and roll it up.
Mmmmm.
