(16,350 posts)Shmura matzah is becoming a lot more popular, my neighborhood Safeway is selling it this year. It really does have a lot more flavor than regular wheat matzah, though sometimes it's over cooked.
I really like matzah and eat it year round. I could write a cookbook about all the things I do with it.
For flavor try a rye matzah, Osem makes a good one. Nice and crispy with a nutty flavor. They also make a "Mediterranean" matzah with garlic and sun dried tomatoes that's really good.

Put a little cheese on a half piece and pop it in the microwave for 10-15 seconds, then top with your fav salsa or hot sauce, makes a great cheese crisp.
Break it up into small pieces and put in scrambled eggs before cooking, it's amazing, the pan cooking changes the flavor somehow.

(131,107 posts)WISH I had bought the Osem, as the Shmura is/may be overcooked, and almost hard as rocks!
But thanks for the experience! I generally like matzah too, and wonder whether this might lend itself to the matzah brei I/we've made for years.
