I'm assuming that there's no bulkhead / soffit above the cabinets, and your range hood exhaust line goes straight up into the ceiling?

If the range hood spans the whole distance between cabinets, flush to the wall in the back, that would make a logical place to stop the backsplash. If it's a pendant-type hood, you have to be a bit more creative.

As a rule you stop at the bottom of the cabinets.Exhaust hood ,it would be assumed your exhaust fan is under the cabinet over the stove, but you seem to indicate that is not the case.

A picture would give a visual as to the answer you seek. A soffit works ,stain it same as the cabinets.Sometimes the space is left open or a crown molding is added to the cabinet top's. But the crown molding doesn't always reach the ceiling.

tis a problematic question but my guess is ,stop at the bottom of the cabinets with your tile.
