My neighbor gave me this recipe, which she got from a friend. I have been making it for 10 years or longer. It is good for using some of the summer garden zucchini, or as a holiday side. It is very eggy, but cuts in neat squares.
Zucchini Casserole (4-8 servings)
8 x 8 pan, sprayed or brushed with oil
preheat oven to 350 d. center rack
3 cups grated zucchini
4 eggs
1/2 cup vegetable oil
1 cup of dry Bisquick mix
1/2 cup chopped onion
1 tsp seasoned salt
salt and pepper to taste
1/2 cup of grated sharp cheddar cheese
Mix the eggs, oil, zucchini, onions and cheese together in a large bowl. Add the dry Bisquick and seasoned salt, and salt and pepper, more or less to taste. Mix well, pour into the pan and spread. You can divide the cheese and sprinkle some on top. Bake at 350 for about 40 minutes until set and knife comes out clean.
I make my own Bisquik mix. Today, I swapped out part of the white flour with coconut flour, and the casserole turned out perfect. If you use Bisquik, you probably won't have to add much salt. I usually add a couple of shakes from my big kitchen shaker, probably 1/8 tsp. I also add a couple drops of hot sauce.
I have Lawry seasoned salt, but I've used Creole style seasoning if I have it.
I usually put 1/2 cup of cheese into the mix, then sprinkle more on.

(16,949 posts)This is a flexible recipe. If you add other ingredients that are moist, you might want to drain a little of the moisture off.

(16,949 posts)About 1 cup of flour, 1/2 tsp salt, tsp baking powder, 1/4 c. of shortening. I've been using coconut oil for several years to make this.
You can make a larger batch of these ingredients and store it in your freezer. You can find 'make your own Bisquick' recipes online. When you want biscuits, or other things based on Bisquick recipes, measure out your mix and add milk. I've been doing it for years, after my daughter mentioned that I'd avoid some preservatives that way. It is also so much cheaper than the instant biscuit products.
Today, I used about 2/3 white flour, 1/3 coconut flour, and coconut oil. It turned out really good, and since I'm still watching my carbs, I'll do it this way from now on.
I think coconut flour is better for things like this. I have almond flour, and I use it for sweeter baked goods. What do you think you'll use?

Speaking of Bisquick, I used to keep that on hand to make biscuits, and I remember those biscuits as very flaky, light and good. These days I have been experimenting with regular AP flour for biscuits, and they are terrible - tough and dry. I just got some White Lily flour which made the best biscuits I've had in a long time.

(16,949 posts)blend the dry ingredients and fat until it is the texture of cornmeal. Ad the liquid, and mix just enough to blend. If you mix the dough too long after you add the liquid, it'll make the biscuits tough. It seems like the homemade biscuits bake well at 400-425 degrees. My Mom loved biscuits and I tried to make them really good for her

(16,949 posts)If you need to, I don't think it would hurt. If you leave the peel on, the casserole is a nice eggy yellow, with green flecks all through it. I think it is an appetizing mix of colors.

(16,949 posts)But I have kind neighbors and friends I like the big zucchini, like the nutty flavor the seeds add.
I stopped buying Bisquick and the biscuit mixes years ago. It is pretty quick to mix up the dry and freeze it to use as needed. The dry mix lasts a long time.

(16,949 posts)I made a recipe of it Sunday, just finished it yesterday. I am going to a small open-air produce stand tomorrow and get some more produce Like zucchini. lol
