What's for Dinner, Thurs., June 4, 2020

Pork loin roast with spicy sauce that has vegetables over it, mostly celery and onions.

Side dishes are toscano over sauce that the RG made with cannellinis and herbs. It's sort of creamy and the idea is to have a bite of the kale and dip it into the sauce. There is also sliced zucchini, and the idea's the same--vegetable bite, dip.

I had the most beautiful head of ruffly chartreuse lettuce at the garden and the minute I spied it, I could just taste it with mustard vinaigrette, so that's what I made for the salad. I put other garden vegetables in, too, namely golden grape tomatoes, cucumber, scallions, etc.

For dessert: chocolate chip cookie sandwich.

Just went shopping today! So plenty of goodness in the salad: red & yellow peppers, plum tomatoes, carrots, oil and vinegar drizzled over salad creation with organic croutons. Not sure what the second course will be. I am wiped out after 3 sleepless nights.
My first time out in 12 days.

It was a quick run to the bank, mail box place and Aldi's. I was under self control though, and didn't pick up another tin of the Rose White Chocolate cookies from Denmark, I think. I consumed a whole tin of those cookies last week. I highly recommend Aldi's selection of cookies. This tin was in the specials aisle but I passed on it today.

I will have yogurt and fruit for desert.

7. leftovers

Al's out on a motorcycle ride, and they're going to stop somewhere in NH for some al fresco dining, so I'm on my own.

I had a leftover stuffed pepper and 1/2 apple.

Now I'm digging into some Ben & Jerry's Boom Chocolatta! and have discovered that my "cookie core" pint of ice cream has two "cores." Nice bonus.
