What's for Dinner ~ Monday April 16th

Sorry for the delay in posting! I couldn't get the post new thread to function.

We're having Beer Batter Swai and home made Onion Rings tonight. Not sure about veggies or dessert yet.

I need to lose quite a lot of weight, I've had a huge gain since my last hospital stay. Maybe some of your good energy will rub off on me.

I try to get 35+ grams of fiber every day. I lost 30 lbs. so far. These last five will.not.come.off!

It's one of those days when I don't feel like cooking much and nothing really sounds appealing to me. I think the soup and sandwich combo will be just enough.

all over the coals. Corn salsa on the side side plus the end of the brownies.

Killer day here, we hit the mid 70's. Did some yard work in the AM but I don't want to go inside 'till dark. Way too nice to be inside. So, it's the hibachi on the front walkway... Later.

I change up my normal recipe when serving the kids. Instead of chopping up the carrots finely like I do the onion and celery...I keep some of them keep them chunky and add them at the end. And serve with sticky rice.

You'll have to share your recipe for the onion rings because both my kids love them, as do I!

Bill cuts the onion rings very thin, so they cook well and get crispy. If we come up with a good homemade better, I'll post it.

I should do that more often.... we grow thyme in our garden, so I always have fresh available.
