What's for Dinner, Mon., Apr. 27, 2020

Fresh pasta with roasted vegetables: tomatoes, zucchini, red onion, eggplant.

Meatloaf sandwiches on fresh bread the RG baked this a.m.

Lentils with carrots,cut into small cubes.

Fruit salad for dessert. Has strawberries and blueberries, also oranges and honeycrisp apple. I take toasted almonds and hazelnuts, pour a little agave over them, and then mix up it up with the fruit.

The RG has a different method and I'm trying his method tomorrow.

Chicken vindaloo served with Basmati rice, fake aloo paratha and steamed cabbage. I'm going to make an onion relish and some raita. We don't have any Indian beers so we'll go with a local IPA. Fresh fruit for dessert.

In the instant pot with a onion soup mix rub. Potatoes and green beans.

Edit to add: and some red cabbage slaw
