i'm thinking roasted acorn squash and couscous with tomatoes and pine nuts. i've got a loaf of bread rising, too.

and a Greek salad . I think I could eat middle eastern food every day of the week, well that and Mexican food are my favorites....

Homely but we've been picking at the lamb leg since Sunday and I'm out of love with white meat. Freezing the rest, will do up a little cabbage salad for tonight to go with -- I think it was a post of elleng's that helped me get over my cabbage phobia. About time, too.

So might have that, might freeze it for later.

Turned out pretty well, my basic go-to soup recipe, souped up with tomato and a nice spice mix

Simmered a 2 lb turkey thigh with
Onion
Garlic
Carrots
Celery
crushed tomato
bay leaf
mini pinch of turmeric
cumin
coriander
oregano
basil
added a handful of tubetti pasta and a handful of frozen peas near the end of the more than 2 hour cooking time (that turkey thigh needed some long slow cooking) as well as the turkey meat

But still not sure about tonight's meal

I had a snack for dinner -- popcorn and a cup of chai. The other members of the family popped a frozen pizza in the oven.
