What's for Dinner, Sat., Feb. 22, 2020

Chicken/vegetable lasagna.

Roasted beet slices.

Roasted eggplant with garlic.

Spinach/iceberg salad with cucumber, purple radish slices, red onion.

Blueberry ginger kombucha for me, wine for the RG.

Frozen fish sticks and blue box Mac & cheese & coleslaw & milk.

Mom did that on Fridays in Lent, which starts next Wednesday.

meatloaf, ( it is cold here, need some comfort food) a baked potato and yes,, I do meatloaf a bit weird.

health concerns lead me to try to eat fish a couple times a week - difficult and can be expensive here in the Midwest. My husband and son were skeptical about the pasta, but both deemed it quite acceptable. It had parsley, garlic and lemon. Recipe here: https://www.saltandlavender.com/easy-canned-tuna-pasta/

We also had green beans dressed with red wine vinegar and olive oil, mint and feta. I have a jar of freeze dried mint that I need to find uses for, ideas welcome ...

Dessert is yellow cake with strawberries and whipped cream.
