What's for Dinner, Fri., Jan. 31, 2020

Appetizers: Tostitos filled with guacamole (freshly made--has tomatoes in it, too).

Beef soup with potatoes.

Sliced zucchini and eggplant layered with cheese.

Sliced mango.

To drink: apple cider.

Dessert: the RG brought homemade Scottish shortbread from last night's party. We'll have that with a fresh pot of ginger tea for dessert.

Miss Millie--hope Al got the budget done!

So I imagine when we get back we'll throw something easy together.

Dad & Sis got a chicken/vegetable stir-fry over rice noodles. Zucchini, carrots, red & yellow bell pepper, mushrooms, celery, onions, garlic and ginger in the stir-fry.

With Parmesan, sage, parsley, onions, carrots, garlic. Threw the bunch in a food processor and just added meats.

And Hell yeah, I made gravy with the stuff under the loaf.
