1. My mom taught me to use rolled oats in stead of bread crumbs.

and I've done it a few times. I always added another egg, a bit more milk/water so it was the right texture and oats expanded.

Meatloaf Recipe
Ingredients:

1 package Lipton Onion Soup Mix
2 pounds lean ground beef
1 large egg
2/3 cup milk
3 Tablespoons catsup
3 Tablespoons brown sugar
1 Tablespoon yellow mustard

Directions:

1. Preheat the oven to 350 degrees F.

2. Mix the onion soup mix, ground beef, egg and milk together.

3. Form the combination into a well packed loaf shape in a 13 X 9 X 2 loaf pan.

4. Combine the rest of the ingredients and spoon onto the top of the meatloaf.

5. Bake uncovered, for about an hour. When done, take the meatloaf out of the pan and place on a serving plate. Let stand for 10 minutes before slicing.

but the last time I made it I used fresh crumbs from gluten free bread and the usual stuff, onion, herbs and egg. It was wonderful, grass raised meat and all.

6. Tomatoes, onions, green chilis, garlic, zucchini and a slight amount of bread. That's it.

have used bread crumbs

The hubs is allergic to Wheat and oats so I will have to use Rice. I'm not a big fan of meatloaf but have had a request for it so I thought maybe you all could give me some inspiration for someting new and zesty.

ground beef
diced onion
rolled oats
egg
poultry seasoning
milk
salt & pepper

glaze of catsup, mustard, brown sugar and nutmeg

We think it's the perfect meatloaf; been using it for 40 years.

If you can't use oats in meatloaf, perhaps you could use some cooked quinoa. The purpose of the crumbs or oats is to hold the liquids -- to make it tender.

our family recipie to me is boring. My sisters and I all agree on that.

I haven't been able to eat much of anything but my family is still healthy and loves to eat.

With the Hubs being allergic to Wheat and Oats cooking gets more interesting.

Thought I have used breadcrumbs and oats in the past...
After the dressing I add a mix of whatever meats and veggies are handy.

I mix up what I usually use for meatloaf (fake ground beef, onions, peppers, eggs, tomato sauce, tomato paste, bread crumbs, seasoning) add some diced yukon gold potatoes (I dice these and cook them at 375 for 14 minutes before adding them to the mixture). I then put this all in a pie crust and use a glaze made with honey, balsamic, and tomato sauce. It was originally one of those dishes I made because those were the ingredients we had left but it has become a regular meal in our house.

ground garlic, ground ginger, worcestershire sauce. Glazed with honey, brown sugar and dijon mustard blend.

Pork seems to help keep it moist, yet the whole sets well and the rest helps make a sweet / tangy kind of loaf.

turned out pretty good so my family says. It was moist and juicy.

It's never crumbled. I like a chopped green pepper in it along with the dried onions from soup mix. If sodium is an issue, you can use a salt-free boullion for beefy flavor.

I haven't tried it yet but I like the idea of using grated potatoes instead of oats or bread crumbs. I also like how she tells us to use stale bread to absorb the grease in the bottom of the pan.

Grated Potato Meatloaf

3 pounds ground beef
½ med onion, grated
1 clove garlic, grated
1 med potato, grated
1 tsp. kosher salt
¼ tsp. black pepper
½ cup milk
1 large egg
2 Tbsp. Worcestershire sauce
2 Tbsp. ketchup

Grate the onion, garlic and potato in a large bowl. Add salt, pepper, milk, egg and Worcestershire sauce. Mix to blend. Add ground beef and mix to distribute ingredients evenly.

Shape into a log and place in a 9 X13” baking dish.*optional – place bread around meatloaf to absorb oil from meat loaf as it cooks.

Smear ketchup over the top of the meatloaf and bake in a 350 degree oven for 1 hour and 15 minutes.
