What's for Dinner, Sun., Jan. 5, 2020

Vegetable Meatloaf with Balsamic Glaze. It does have ground pork/beef in it, but it's titled as such because there are so many vegetables in the mix.

Club crackers w/salmon salad as an appetizer.

Blueberry-ginger kombucha to drink.

PJMcK asked that, too, and I wrote an answer but never got around to posting it. Long story short, it's fermented black tea. It can have all kinds of flavors--the blueberry ginger is my fave, but there's also cherry and cranberry that I like, too. It's fizzy.

If you like "tartness," you'll like kombucha. Your local grocery store prol'ly sells it.

8. Boneless chicken marinated and baked with black rice and broccoli

The marinade was made with Christmas gifts - rosemary olive oil and citrus vinegar, both made by a friend.

Marinade

1/4 cup rosemary olive oil
1/4 cup citrus vinegar
2 Tbspn honey mustard
1/2 tspn dried rosemary

4 pounds boneless chicken (half thighs and half breasts)

Salt & pepper the chicken. Put in baking dish and pour the marinade over. Let marinate up to 12 hours. Either grill for 5-6 minutes per side over coals or bake in oven at 325 for 30-45 minutes until done. Baste with the marinade (or since I bake it, I pour the marinade over the chicken before putting it in the oven).

of a bit of mayo, maple syrup and garlic...sounds awful but is really good. Also a baked sweet potato and a salad with olives, all sorts of vegetables, chickpea 'croutons', chopped pears, boiled eggs...and more. for dessert a small piece of pumpkin cheese cake and a cappuccino Everything was gluten free and delicious.
