What's for Dinner, Wed., Dec. 25, 2019 Christmas Day

Salmon with brown sugar crust.

Brussels sprouts, cubed butternut squash, cranberries, and toasted pecans, roasted. Olive oil and garlic drizzled over.

Sweet potatoes, spinach, and goat cheese, also roasted. The goat cheese goes in at the last of the roasting period.

Yesterday the RG and I went to the Portuguese grocery store in Newark for items for today's dinner. We bought all kinds of bakery items. The clerk at the bakery in the store looked like a gnarled little elf. We asked her for a recommendation and she pointed at some little pies. We asked what they were made of and she said green beans. We laughed. She insisted she wasn't joking, and then wanted us to taste them which we did. They were amazing! Very sweet and delicious. Never heard of such a thing.

However we ordered lots of other bakery items so we will be having those with eggnog ice cream for dessert. Little coconut pies, orange pies, tiramisu, and a few others that I can't recall.

oh and p.s. I received a chocolate covered apple for a present, so I might have that.

after a late lunch.

FLFC and TJ are sleeping and a nap seems a good idea to me.

I am thinking of breakfast for dinner much later today, if TJ agrees. Maybe pancakes, ham and eggs.

Since we're taking a break from our usual low-carb regimen, I'm making burgers with all the trimmings. Even fries! But I have sugar-free chocolate mousse for dessert.

We're BBQ'n in the snow!

Got a bunch of chicken thighs, and got 2 bacon wrapped steaks

mashed taters

roasted & mashed sweet taters

rice w/mixed vegies - generic for the teen who doesnt like anything but butter on rice

"crack sprouts" - roasted & carmelized with cranberries and bacon marinated in strawberry vinaigrette

for appetizers we have black olives, deviled eggs

we're vibin' with some grilled cheese & soup for lunch

Also just made up some fruity daquiris...Bacardi baby!

We've got a friend & her wife & grandkid staying with us for a week (wasnt gonna let them be in the car between jobs and apartments)

...anyway it's her Bday today so we are making a strawberry cake with funfetti sprinkles
in a special butterfly pan!

leftover Christmas eve goodies and candy, cookies...I post this today as I suffered from a food coma yesterday. Merry belated Christmas.

asparagus wrapped in prosciutto, spinach and tomato salad, some sort of potatoes (maybe mashed, maybe roasted- will decide when the time comes). Christmas cookies for dessert.

We had Chinese and Raising cane chicken fingers for Christmas eve...the Chinese joint had a two or three hour wait....we ordered to go...made stuff too.

We all commented as to how much more crowded the restaurants were.
It ended up not being that dreadful a wait - only about 25 minutes. Well worth it for the most amazing roast duck I had had in some time!
