What's for Dinner, Christmas Eve, Tues., Dec. 24, 2019

Appetizers: salmon salad on crackers.

Salad: Fennel, cucumber, zucchini, goat's cheese salad with dill.

Main dish: Pork rack with crispy crackling. It's seasoned with fennel seeds, garlic, sage, and thyme.

Roasted potatoes with rosemary and garlic.

Dessert: Mango tarte tatin. This is an easy dessert--just peeled, seeded mangoes face down on some puff pastry. Vanilla bean, a little caster sugar and butter drizzled over the top. I'll top it with some melted egg nog gelato.

My brother is visiting us in the Catskill Mountains and I'm making a Christmas feast.

Appetizers
Shrimp cocktails
Salmon and Beluga caviar with chopped hard-boiled egg, capers, minced onion on toast

Entree
Angus beef round roast with homemade gravy
Pan-fried asparagus with small pieces of red pepper
Hasselback potatoes

- potato fritters and home-made fish sticks (for the 7 year old) REAL fisheys!!

Lots of people and children in a small house.

Food, all sorts of it. Turkey, ham, mashed potatoes, stuffing, mac-n-cheese, brocolli rice casserole, green beans, corn, fruit salad, and I just don't recall the rest.

Sweets of all sorts, much of it homemade. Peanut butter pie was a new one to me. I didn't ask for the recipe .

FLFC remained at home and explained how miserable he was when we returned. We think he just slept.

He needed treats and a cheeseburger to make up for his loneliness. He's asleep already.
