So well have that on top of some penne and also a green salad.
He said he got some red wine the other day. Chianti, probably.

How did you prepare the eggplant, before putting in this pan?

I did the egg wash, flour (added salt and pepper), egg wash, panko bread crumb routine.
Then pan-fried in olive oil
Put some pasta sauce in bottom of dish, placed eggplant in dish and topped with mozzarella
And I baked them in my new toy, an AirFryer/Toaster Oven (Cuisinart)
