What's for Dinner ~ Sunday April 1st

April 1st is a weird anniversary for me.
11 years ago on this date I had emergency surgery that saved my life, but also sent me along this path of health problems.

Bill is working and wont be home for dinner, and my stomach is misbehaving again, so I may just chill with a bowl of mint chocolate chip ice cream and the second book in the Hunger Games series. My friend left me his old kindle with the series on it when he came to visit and I just finished the first book today. Must finish all three now, and soon!

What's for dinner where you are?

Glad you're here with us but sorry your tummy is still not feeling well. Today is my middle sister b-day, so it's a anniversary for me as well...went from only child to being a big sister/sibling.

Not sure what we're having but probably will be something on the grill, corn and something with cucumbers. Kids will back here for dinner.

We are having pizza with caramalized onions and goat cheese and a salad. I have community choir practice at 6:00 p.m. I don't like to eat too much prior to practice and it is too late to have dinner when I get home at 8:30 p.m.

April is a weird month for politics, but Easter is coming, which can be a liberating day. So I guess we'll post about Easter Dinner soon, too.

But I don't follow a set menu for holidays anymore. Do you have a traditional meal for Easter Sunday?

some kind of vegetables on the side.

We're going out of town tomorrow so I want to use up anything in the fridge.

I enjoyed The Hunger Games books. They are hard to describe to someone who has not read them yet.

Thought the movie was great, and let me just say the Lifetime Movie I watched yesterday was FAR, FAR more violent and graphic! Eek! No warning either.

And go with livetohike's pizza w/caramelized onion and goat cheese. And yummm, a salad.

Needed a dinner time idea, which is a good reason for dropping by.

oh and p.s., My spouse showed me a tip on caramelizing onions. Sprinkle baking soda over them. Adds a nice color.

I had a tin of smoked herring after working out, and now I'm eating a bowl of eggplant roasted in the leftover kipper oil.
Dinner is going to be a big pot of chili.

Recipe at Nasoya's web site. I got bargains on tofu and colored bell peppers, and this was one of the recipes I found that made use of both. Unfortunately, I accidentally opened a can of tomatoes, when I should have used tomato sauce. But, it turned out okay. I'll top it off with a mango frozen fruit bar later on.

10. Fake Lobster Newburg with Squash Rice and steamed green beans

The Fake Lobster Newburg is an invention I made for the first time today. It's based on a Chicken Newburg recipe I found on AllRecipes.com but I changed it a LOT. My version is not just fake Newburg but it's fake lobster, too! I use a good quality surimi product which is the fish flavored to taste like lobster or crab. It's cheap, quick and easy.

I love the way this recipe turned out - it tastes really rich without a lot of fat. And with avocados 10 a dollar each right now, it was a good way to use some. It does come out kind of a light green with the red flecks of the "lobster" in it. The original recipe calls for red bell pepper but I didn't have any so did use it. I'm not sure I'd like it with the seafood anyway.

Fake Lobster Newburg

2 Tblspns olive oil
1 small onion, chopped
1 clove garlic, minced (size depending on how much you like garlic - I used a big clove)
1 Tblspn butter (used because I ran out of olive oil)
3 Tblspns flour
1 tsp or to taste Old Bay seasoning
3/4 cup home made vegetable stock
1/2 cup milk
zest and juice of one medium lemon
16 ounces fake lobster (or crab)
2 small avocados, peeled, pitted and sliced

Saute onion and garlic until translucent. Stir in butter, Old Bay, and flour. Stir and cook until flour just begins to turn tan. Stir in stock, milk,lemon zest and juice. Stir and cook until it just begins to bubble and thickens. Add fake lobster and avocado, stir in and heat until just heated through.


Squash Rice is also from All Recipes.com but I don't remember the name it is under there. It's a nice way to reduce carbohydrates and increase vegetables and the rice tastes buttery without any fats at all.

1 small onion chopped
1 clove garlic, minced
Some yellow squash and zucchini, diced small (1/4" dice) (I usually use i medium of each)
1 cup brown rice
2 cups water or stock
salt and pepper to taste

Saute onion and garlic until just translucent. Add squash, zucchini, and rice and stir for a few minutes. Add water, salt and pepper. Bring to a boil, reduce to a simmer and cook 45 minutes until rice is done.

The green beans were just plain green beans steamed in the microwave.

I went to a fundraiser, listening to some old Austin bands and had fish tacos that were delicious.
