What's for Dinner, Tues., Sept. 10, 2019

Appetizer: grilled zucchini slices topped with roasted red pepper and melted French cheese. Seeded flatbreads to go with.

Cream-based seafood chowder with corn, shrimp, lobster, and potato. There are also little bits of red pepper. The RG is topping it with fresh celery leaves.

Salad with grilled chicken, peanuts, red and green pepper slivers, and thinly sliced cabbage.

Cold apple cider to drink.

Dessert: we are dueling over who is making dessert tonight. I want to grill nectarines after I brush them with butter and agave. Serve with vanilla ice cream. The RG, however, says he has purchased a surprise dessert that will be better than this.

For the first time, I'm going to make it at home. I'm alone in the mountain house so it's a safe environment to try something new, ha ha!

I'll let you know how it turns out. I'm still deciphering the recipe but I'm looking forward to it since it's one of my favorite Indian dishes.

3. Salmon burgers

I have some leftover salmon from a large fillet I cooked on Sunday. Burgers include flaked salmon, egg, bread crumbs, chopped red and green pepper, seasoned salt, and mayo. I will bread the burgers with panko crumbs and fry them in a cast iron skillet.

Bakery brioche buns, lettuce, tomato slices (from garden).

Pineapple cole slaw -- shredded cabbage and carrots, crushed pineapple, pineapple juice, seasoned salt, apple cider vinegar a small amt. of sugar, pepper.

Since it's a warm day today -- some cold Blue Moon beer to go with.

The dinner sound lovely. I made chicken earlier in the weak with garlic and herbs...so I had a sandwich tonight on ciabatta with mayo and lettuce...pretzals and fresh chopped vegetables. Dessert is baked apples and fat free whipped cream...tasty.

They were very good. Mango is so refreshing.

However, you reminded me of how much I love baked apples. I ❤️ them with yogurt, sweetened with agave and with a little cinnamon added, too. I am going to scout for some good apples.
