new cheap, healthy, easy recipe. couscous and chicken

cut up and cooked some chicken with a little lite soy
cut up 1 bell pepper
1 butternut squash
some onion

sauteed until veggies cooked.

add the cooked couscous and stir

put on top cut avocados and tomatoes.

i get so tired of food, and heavy food. this was light and nice. no strong flavors, yet all complimentary. i was going to add some frozen peas and forgot. but really, you can use whatever veggies you want. it was roasted garlic and olive oil couscous or i would have sauteed some garlic, too.

the tomato and avocado where excellent with it.

Quinoa subs nicely for bulgur wheat in tabbouli. It might also sub for couscous.

It sure doesn't taste like much by itself.

I like to rehydrate dried mushrooms with boiling water, then drizzle the broth over prepared couscous, chop up the mushrooms and mix in with leftover cooked veggies, then add grilled chicken or fish and you have dinner.
