1. chickpea pumpkin soup and fresh bread

i have some canned pumpkin and bell peppers in the fridge that need used, so i figured i'd make a soup. i roasted the peppers last night and i'm going to cook some sweet potato and carrot and puree it with some coconut milk. i'm trying a wheat no-knead loaf today, we'll see how that turns out. i'm kind of making this meal up as i go along

i've felt like i'm in a bit of a rut with my cooking, so i'm messing around with new things and new flavors. i love cooking adventures

Another problem is, I just can't find some of the ingredients I need/want out here in the woods .

i based it on this recipe:

i added a 1/4 tsp each chili powder and cinnamon and a tsp (i think) of yellow curry and cooked the onion and garlic with the spices for a few minutes. then i dumped in a carton of veggie stock and simmered a diced sweet potato and a couple diced carrots until tender. then in went a can of pumpkin, the chickpeas, a couple chopped roasted peppers and a can of coconut milk and i ran the stick blender through it.

i'm going to double the chili powder and cinnamon next time and add another carrot. i think i'm going to tell my dad i want a blender for my birthday, it wasn't nearly as smooth as i wanted to be by the time i was tired of using the handheld. i'm lazy

No, that's not what we are eating, that's my battle cry for the groceries that DH will be bringing back later this afternoon.

I gave him a list, as usual, but instructed him to look at what's fresh and what's on sale and buy things he would like me to fix.

I usually don't trust him to do this, but it should be fun!

wanders in with something unexpected. It can be quite a surprise sometimes. He's a fan of what he calls the "Used Meat" section. (Discount area) They tend to mark stuff up for the tourists here, so he likes shopping the after weekend mark downs.

Baked panko-coated chicken breasts, a spot of lime-enchanced cole slaw, mashed potatoes, green beans cooked with crisp bacon and onion. Crusty roll. Mr. Pup had a "Boston" hotdog (comes with beans and bloating) today at the new hot dog shack for lunch. He said he wasn't hungry, but he cleaned his plate. Simple but satisfying.

I really like the idea of a pop of lime with the coleslaw. I may have to try that!

I grate a little peel into the mix and use lime juice as the acid. All is glorious in my world today. Hope yours is full of good surprises!

I have some kind of stomach bug so toast was on my menu. DH had some leftover shrimp scampi and a salad he made for himself.

I'm finally eating agin, I had something for a couple weeks that had me very uninterested in food too. Not fun!

I'm feeling much better today but still not 100%. DH got up this morning with the same symptoms I had yesterday.

I'm glad to hear that you're interested in food again yourself. It's a terrible place to be for a person who loved to eat good food.
