I've only had it raw. It is a nutritional powerhouse of a green and treasured by expectant mothers in cultures all over the world.

Add some orange segments, almonds, red onion, blue cheese crumbles, water chestnuts, croutons, and top with a Dijon mustard/vinegar/oil dressing with some honey added for sweetness.

and I use it frequently in Chinese soups. It's also good in small amounts in tossed salads.

Have a tea party and make watercress sammies.

Pull off the stems and layer the cress on some cream cheese on a "good" bread. I like it with Pumpernickel or a dense rye. Of course cut the ends off and cut into four sections. If I have it I add a bit of smoked salmon.

I used to go to high tea at the Windsor court in New Orleans and just loved the little, dainty sandwiches.

I also do this with spinach. It wilts it just right and is a really nice accompaniment

I'll have to try it with spinach or kale sometime. I usually have one or the other in the house. Would be nice with bleu cheese too.

I have also done this with arugula and loved it.

And it erases some of the guilt associated with eating that yummy steak!

Used a bunch and made homemade mayo I used on a pita sandwich with tomatoes and mozzarella. Then pureed some and added it to my V-8....yummy.

and had pulled some basil, parsley, spinach and thought cilantro. I normally always do the smell test because I get flat parsley and cilantro confused just by looking. Actually ended up being a good mistake.
