my elderberries are just forming here in Northern Vermont (weeks before they are ready)... I sell honey at my house and used the last of last year's to make 'elderberry infused honey'... it was the first to sell out (I also make ginger, schisandra and ginseng honey)
... I had a man come to the house and wanted 10 jars so I bought dried elderberries to make the honey for him... it just isn't quite the same

Are you planning to make any more this year?
I just have a few bushes in my back yard and usually make jelly out of it. My fave jelly on a PB&J. Still have 9 jars from last year.
