What's for Dinner, Sun., July 28, 2019

Mango chicken sandwiches on brioche toast. The chicken had been marinated in almond mixture. In addition, another layer of the sandwich was sausage, which was cooked with peppers and herbs (basil, sage, and lemon ??? can't remember the name of this herb but it's not lemon balm). There was another type of sausage in the mixture, too. Some kind of Italian sausage, but not the usual kind. In between were mango slices and vegetables like grilled zucchini and red onion. On top was a tablespoon of crema mexicana and avocado cream. The RG made this up with his own ingenuity.

I'm having a salad: spinach, bib and endive lettuce, cooked and sliced beets and carrots, tomatoes, walnuts with cream cheese and mayo dressing. Jiffy cornbread and honey butter.

mustard. We had a salad too...went to the grocery store salad bar and picked olives, fresh mozzarella, and all sorts of vegetables and bought fresh baby lettuce...with a light ranch dressing (homemade). For dessert we had cookie sticks stuffed with chocolate...gluten free. I also had some really delicious grapes.
