What's for Dinner, Mon., July 22, 2019

I'm at work and I brought a ham sammich made from brioche bread. It has all the standard goodies like mayo, mustard, lettuce, and Swiss cheese.

I was going to have raspberries and cantaloupe as part of breakfast, but the day slipped by so now I will have it as dessert. Whole walnuts to go with it for added crunch.

1. Grilled seafood

Fresh scallops and a little tuna steak (from last night) marinated in olive oil, garlic and fresh herbs. These will be grilled alongside red, yellow and green peppers with onions. All of it served over yellow rice.

We’re still debating whether to make a salad or grill some asparagus.

Orange sherbet for dessert.

getting the incredible thunderstorms we are getting here in Jersey. Torrents of rain, thunder and lightening, and I'm looking at a classroom full of bedraggled students. They should never have come back from the cafeteria with this lightening--not safe.

It was in the upper-90s and sunny all day. Beautiful but a bit oppressive.

I feel for your students! I remember days like that but in those ancient times, our school didn’t have AC.

Tandoori spiced curry over rice. Decafe tea.

The temp here has dropped a good bit, still humid & the cays are running from open window to window to sniff the fresh air

I modify it a little bit. I use dry white wine, rather than the seafood stock. I don't always have feta cheese around, and it's fine without it. Tonight, I forgot to grate the Parmesan over the top. It was still delicious without any cheese. It works well with any whitefish. I make it with frozen Alaskan pollock. I don't bother to thaw it. I just cook it for an extra 5-7 minutes. The recipe calls for pancetta, but I sometimes just use regular, uncured bacon.
