I can't get any real fresh polish sausage(not kielbasa) where I live now. I used to go every few years to Piatak's Meats on 68th and Broadway in Merrillville, Indiana when I used to visit my sister and brother in law and bring back a whole lot of it vacuum packed and frozen. They closed now after being robbed several times. I make sausage usually the week between Christmas and New Years. Boston butt pork roasts are .99 a lb at that time, I have an industrial 6 hp meat grinder and a sausage stuffer. The last couple of years I made Spanish chorizo and garlic sausage. They turned out pretty good except I used a little too much garlic. I really miss my fresh polish sausage. I'm gonna give it a try this year. Here is my question:
I know the basic spices are salt, pepper, garlic, and marjoram. If anyone has a recipe for this with the proportions of meat and the spices please post it or DU mail it to me. There might be different ingredients that I don't know about too. Any help is highly appreciated. Thanks DU.

(34,661 posts)instead of regular processed table salt. You might want to cut that back a bit,most sausage recipes used way to much salt as a flavor enhancer and as a source of absorbing and holding water .
