What's for Dinner, Sat., July 6, 2019

Appetizer is a pork empanada. Also had cheddar cheese and Peruvian yellow pepper sauce.

Spicy garlic shrimp with pasta in tomato sauce.

Tossed salad from big, beautiful head of lettuce I got at the farmer's market.

Dessert is mixed fruit croustade (kiwi, blackberries, apple).

Saw it on the Pioneer Woman's show this morning. Looked pretty good, so I got what I needed and am heading out to the kitchen to make it.

3. Cajun Stir Fry with andouille sausage

Love this dish:

FOllow usual stir fry technique.

Used the following vegetables:
yellow and zucchini summer squash
red bell pepper
celery
onion
garlic
tomato
fresh okra

I took the andouille out of the skin and crumbled it up - cooked it with some Cajun spices sprinkled on.

Did a quick hot toss of the celery, red peppers and okra

cooked the onion and garlic then added the squashes and let that cook for a while.

Added the andouille back in and the chopped tomato. Finally add the celery red peppers and okra back to the pot.

I sprinkled all the veg with cajun spices too.

Just before serving, stir in Worcestershire sauce

Serve over hot rice.

You can make it with fresh or leftover chicken, beef or pork. Howeve this andouille version was so good I may never make it any other way
