What's for Dinner, Thurs., June 27, 2019

We're having a cold plate tonight. As an appetizer, though, dinner will start off with cold soup that the RG made at my request: I wanted vichyssoise but with no potatoes because of carbs. So he is making an imitation vichyssoise and I've already tasted it; it's fantastic. He used creamed cannellinis instead of potatoes.

On top will go some croutons made from crusty bread (I know, defeats the purpose, right?), and little pimento seasoned pork bits along with herbs.

After that, the cold plate, which has kale salad with currants and feta cheese. A square of an egg-pasta dish that will be baked and cool by the time for dinner.

Nectarines and mint for dessert.

We are eating more vegetarian fare now. Made fresh falafel for the first time with yogurt cucumber sauce. Fresh berries for dessert.

bagged Cesar salad, and some cheesy, herby focaccia bread I found on sale.

cherries, peaches, or ice cream for dessert if wanted

So I was off the hook. (And I didn't have to cook for Dad because my brother came to visit him and take him out for his birthday--he turned 88 today. I did bring him a few lemon cupcakes w/ raspberry jam on top.)

Al made bunless cheeseburgers, and steamed cauliflower, and we had some sliced tomatoes and the last of the macaroni salad.

He also made some brownies.

Wow! That sound dastardly!

I'm traveling on business again. This week I'm in Miami and that makes four weeks in a row away from home.

Tonight, however, I was invited to my client's home and they prepared a delicious feast.

Appetizers
Thin slices of focaccia served with olives and red pepper with olive oil drizzled over everything
Marinated Brussel sprouts sliced and grilled with a yogurt and dill dipping sauce
Champagne to celebrate our continuing collaboration

Entrees
Seared filets of Ahi tuna with a black pepper crust
Vegetable cheeseburger sliders
They had wine, I had sweet tea.

Salad
Shredded red cabbage and arugula lettuce with red onion, capers and a very light mustard dressing

Dessert
Really high-end vanilla ice cream with thin slices of mango
Snifters of brandy

Often, I'm amazed and grateful for the good things in my life!
