any tips for baking a pie in a toaster oven?

even though I bought a new stove a month or so back, it has been sitting in my living room not installed for a couple of stupid reasons. doesn't really matter because it is too hot to use a full size oven anyway. so I got a toaster oven to use out on the porch for summer (and obviously for heating up certain kinds of leftovers when nuking would fail or be gross).

I'm liking it quite a bit! today I decided to experiment with a pie. I am using some really old pre-made, store bought crusts (I know, for shame! but I didn't buy them and I can't throw out anything) and some slightly green apricots rescued from the birds and squirrels off my tree before they were totally ripe. they were halved and frozen, I stacked them in the bottom crust with about a cup of sugar (they are really tart).

I have made fresh-frozen fruit pies this way countless times in a regular oven.

the top crust is pretty much done already, had foil around the edges but didn't do the top until check/turn at 15 min. moved to lowest rack and lowered temp to 375. what next?

I don’t use my full size oven very often. I don’t make any adjustments for time or temp.

or part of it, then stirred in the rest for texture. but it more or less came out. I will certainly give it another try. sure is nice not having all that heat in the kitchen!

The toaster oven isn’t large enough to maintain consistent heat needed for larger objects. Use your real oven to get even heating.

Just my opinion.

8 slice toaster, can put a 12 inch pizza in there. I wouldn't call this pie a county fair winner, but for a first try it was a good lesson. I know what to do next time.

even pizza. quiche and pot pies though usually in an 8 inch or pie plate or ramekin. You just have to watch it closely because it gets very hot very quickly especially on top rack. If you ever have a problem keep door closed and pull plug immediately. Never use paper or plastic in it.
