What's for Dinner, Fri., June 21, 2019

The RG is making up a big pot of his favorite Roman dish that he learned how to make when he lived there: canellinis with tuna, chopped red onion, and celery.

However, it's not my favorite dish so I'll be having something different. Maybe a burger with coleslaw. That was pretty good the other night and there's enough left for another round.

Dessert will be blackberries on a slice of lemon sponge cake with a tablespoon or two of lemon sorbet.

I sautéed it with garlic in olive oil, threw in some cooked cellophane noodles, and covered it in Korean bbq sauce. Not bad.

Fresh out of the fridge and ready for another go:

I love leeks and am always thinking up ways to cook them. Yesterday, I had time to cook and a taste for the pot pies I used to love as a child. However, I no longer eat meat and I had a large leek and other veggies on hand and the pie above was the result. It was absolutely delicious! I used a biscuit type crust, rather than the usual pastry crust, and the result was more than acceptable. I'll post my recipe if anyone wants it.
