‘Zaitoun: Recipes From the Palestinian Kitchen’ by Yasmine Khan. $30ish.
You can likely find the podcast at their site. This book was on my list.

Samin Nosrat gave me the insight how foods get put together to make them taste good.
What ever recipe I use, I now know how to taste it and how to balance the flavor. Does it have enough salt (I don't use much) is the fat and acid balanced. How much heat do I need.
I can't say enough about this book and a good thermometer..
YMMV, works for me
