Prime rib tonight! Pan-fried in the cast iron skillet. Nuttin' on 'em except salt, pepper, and olive oil.
Vegetable accompaniments: Breaded zucchini round sandwiches. The "sandwich" filling is bread crumbs, crushed anchovy, and butter. A little sliced mint. The zucchini rounds were dipped in egg, breaded, and baked before making them into "sandwiches."
Miniature vegetable sandwiches on pumpernickel. Filled with a mixture of goat cheese and roasted peppers plus a few thin slices of tomato.
Sliced apple. Very thin slices covered with cream cheese and minced vegetables.
Dessert is a strawberry-blackberry mixture with toasted hazelnuts filling a spongecake shell.

(5,681 posts)Yesterday I marinated chicken breast to bake off for easy eating this week. I did half in basil pesto and half in Franks buffalo wing sauce.
Tonight I am having the buffalo style with more Franks on top. Celery sticks and a side of blue cheese dressing and cottage cheese. Have a cuppa joe brewin.
