What's for Dinner, Sun., Mar. 17, 2019

Happy St. Patrick's Day, everyone!


This shamrock sandwich is easy: just rye bread, cream cheese, cucumbers, and watercress. Yum!

Also corned beef sandwiches. Open face.

It was five-grains in the bowl, then garlic broccoli rabe with red peppers and sauteed Italian sausage and bits of chicken breast. On the top, the chicken broth.

I made a big tossed salad with mesclun, carrots, cucumbers, sliced red onion, and Poblano peppers.

Dessert will be coffee mochis. This is a new Trader Joe item that I picked up the other day.

I'm thinking I'll do it in the Instant Pot. Looking at a recipe that says to parboil the meat (to get the scum off), then 65 minutes under pressure, then cook the potatoes and cabbage in the broth for just 2 or 3 minutes under pressure.

I have a tea ball (for making tea from loose tea). I've used it for putting the herbs and spices in for stock, think I'll put the spice packet in with the corned beef, so it'll be easier to clean up.

I have one of those. I'm going to use it like that--in addition, of course, to its usual function of making superb
Earl Gray tea.

We have chili, macaroni and cheese, and a carton of fresh raspberries. That’s a balanced diet, if you ask me.

By the way, leftover mac and cheese is terrific fried up in a non-stick pan.
