What's for Dinner, Sat., Mar. 9, 2019

Roll-ups. Cream cheese spread over lavash, sprinkled with herbs. Sliced to look like pinwheels.

Layered avocado salad. Has red onion, chopped vegetables, and creamy dressing. Very pretty in layers in a glass bowl.

Chicken quarters cooked in homemade sauce. Not entirely sure of the sauce ingredients, but I see chopped onion in it and I also know there's wine in the sauce.

Dessert: hot fudge sundae with sliced bananas and salted peanuts over the top.

Leftovers I found the the refrigerator. TJ brought them home from work this morning.

Molasses and spice cookies with tea later. The cookies are from the Mennonite bakery.

5. Grecian chicken, rice pilaf, stir fried veggies.

Here's the Grecian chicken recipe:

Boneless chicken breast, cut into pieces. I used two half breasts.
Marinate with oregano, chopped garlic, lemon juice, and olive oil. It's important to but those ingredients on the chicken in order.
Let marinate for a couple of hours or overnight, if you're good at planning ahead
Grill. I have a table top electric grill that I just love. It's a Hamilton Beach and I've probably had it for twenty years or more. The two cut-up chicken breasts just about exactly filled the grill top.

What I like best about the Grecian chicken is that I can easily freeze the cooked chicken and pull out at a future date. I live alone, I don't have that huge an appetite any more (I'm 70) and so it's incredibly economical.

The rice is Rice-A-Roni Rice Pilaf, which I like a lot. It also freezes well.

The stir fry is easy, also. I've cut up carrot, a couple of bell peppers (red and yellow) a zucchini, and an onion, and I do a stir fry of one serving at a time.

Dessert will be butter pecan ice cream.
