What's for Dinner, Thurs., Feb. 14, 2019

Chicken croquettes. They have a spicy sauce for dipping.

Breaded chicken filets. Beautiful golden brown exterior.

A molded vegetable dish: leeks, spinach, and sliced potatoes. The mold is dome-like; so pretty! The mixture holding it together is light and creamy and seems to have a bit of butter in it.

Dessert: the RG made a tres leches cake. It was made with walnut pound cake. So, so good (I sneaked a taste) and I look forward to having it with my spicy chai tea.

Today when I was doing some banking everyone at the bank was excited about where they were going to dinner for Valentine's day. The RG and I had lunch at a Portuguese place because we didn't think to get reservations for the evening meal early enough.

Ohhhh it was fabulous!!!!

Since my hubs and I dined out yesterday, tonight I'm cooking.

Split pea soup with ham, potatoes, and carrots

Pierogi that I bought from a local church

Some hard rolls

And something chocolate ..... I am told it's a surprise .....

Most of my recipes are leftover combinations. Foods with no name.

A pot of curry is in my future. This will last a few days.

3. Lemon chicken from Rao's New York cookbook.

Broil chicken with the skin on. You can use anything that is on sale but they do recommend cutting up pieces that have breast meat.
Broil chicken 15 minutes each side. Let the chicken cool down a bit. Heat up your oven to 350, Mix equal amounts of good olive oil and fresh lemon juice add chopped garlic. I like garlic so I use a lot. Cut up the chicken in smaller pieces and put the chicken in a oven safe pan. I use a big le cruset type flat pan. Pour the lemon garlic olive oil mixture over the chicken and put in the oven at 350 until the lemon mixture bubbles. Viola!

A big salad is good with this. You could make noodles or spaghetti or have spaghetti squash I don't know. This is great chicken.

I’m working on using up what’s in our freezer, so I can give it a good clean out. Today I used up precooked chicken breast by making chicken enchiladas.

We don't have a lot of options in our town but this one is good. It's a bistro that has a creative menu. I know we will get burrata because she loves It, but other than that we shall see. Hoping they have a nice VDAY menu. I usually cook but it is Valentine's Day!

8. Shakshuka-eggs in spicy tomato broth

Snip--"Shakshuka spices may vary, but you’ll commonly find paprika, cumin and chili powder, along with fresh garlic. I’d consider it flavorful spicy, not hot spicy. Though you can always add cayenne pepper if you’d like to heat it up."

This recipe is for 6 servings, so I'll downsize it
INGREDIENTS
1 medium onion, diced
1 red bell pepper, seeded and diced
4 garlic cloves, finely chopped
2 tsp paprika
1 tsp cumin
1/4 tsp chili powder
1 (28-ounce) can whole peeled tomatoes
6 large eggs
salt and pepper, to taste
1 small bunch fresh cilantro, chopped
1 small bunch fresh parsley, chopped

DIRECTIONS
Heat olive oil in a large sauté pan on medium heat. Add the chopped bell pepper and onion and cook for 5 minutes or until the onion becomes translucent.
Add garlic and spices and cook an additional minute.
Pour the can of tomatoes and juice into the pan and break down the tomatoes using a large spoon. Season with salt and pepper and bring the sauce to a simmer.
Use your large spoon to make small wells in the sauce and crack the eggs into each well. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking.
Garnish with chopped cilantro and parsley.


I prefer a particular canned tomato brand-rotel medium.

And buttered toast. Milk

It's really just a chicken stew w/o the potatoes (so chicken, carrots, celery, onion, mushrooms and peas all in a gravy), mixed with pasta and then baked in the oven.

cake in a cup for dessert

TJ is finally awake, unlike FLFC who is still in bed.

TJ's choice for dinner was Chinese.

I requested Chicken and veggies in Garlic Sauce. TJ usually gets boneless spareribs and pork fried rice.

Waiting for the knock on the door.

we use oyster crackers/soda crackers. added some herbs + spices. used an egg. next time trying butter.

store bought German choco cake, vanilla ice cream, Dark Horse sparkling wine (not too bad)
