What's for Dinner, Fri., Feb. 8, 2019

The RG made up an old-fashioned beef stew in the slow cooker. I tasted it already--very tender and delicious.

Tossed green salad to go with it. Cucumber, cherry tomatoes, and red onion.

Dessert is a little ice cream. One kind is hazelnut and the other is vanilla with mascarpone and cashews.

1. We're going to have a pork stir-fry

broccoli, carrots, yellow peppers, onions, mushrooms, celery, garlic and ginger. (We may have some peanuts in the house and if so, I'll use them too.) All over brown rice. Given the amount of pork I thawed and cut up, I think we're going to get two meals out of this.

For my parents tonight I made baked breaded pork chops, herbed/buttered boiled potatoes, green beans, and sliced tomatoes and cucumbers.

I have red Thai rice, so the colors of carrots, broccoli, green cabbage and the light brown chickpeas are going to be more dull then vivid. Still hot, tasty, and thrifty.

TJ and FLFC are asleep. It's a work night for TJ.

Once again I'm eating leftovers,
Tonight I fixed up:

Slow cooked pulled pork, rewarmed in BBQ sauce and placed on a bun
Coleslaw
Collard greens with a dab of butter and a dribble of apple cider vinegar

blackberries for desert

the mac and cheese was whole wheat pasta and velveeta. it was kind of gross. will probably mix in some tuna with the large amount of leftover sometime next week.
