Makes a quick and easy homemade gift when wrapped up in a fancy tin!
A Pyrex glass bowl with handles is perfect for this recipe. My microwave is 1000 watts.
1 and 1/4 cups dry roasted peanuts
1 cup sugar
1/2 cup light corn syrup
1 teaspoon butter (no substitutions)
1 and 1/2 teaspoons baking soda
1 teaspoon vanilla extract
Coat a 15 x 10 flat cookie sheet with cooking spray; set aside.
In a 2-qt. microwave-safe glass bowl, combine sugar and corn syrup. Microwave on HIGH, uncovered, for 3 minutes, stir. Add peanuts, stir until combined.
Microwave mixture on HIGH for 2 and 1/2 minutes or until mixture turns a light amber color. (it will be very hot). Stir in butter. Microwave 30 seconds longer on HIGH. Quickly stir in baking soda and vanilla, mixture will foam. Mix well. Pour onto prepared cookie sheet and spread as thin as possible. Let cool completely and break into pieces. Makes 1 lb.

(2,674 posts)I have a big Pyrex bowl with a handle but I can see taking the bowl out of the microwave could be dangerous. I used to make candy often and always made peanut brittle on the stove in a big deep pan so when it foams up, no worry about spill. Have the dish ready on the counter right by the stove to pour the mixture. This is boiling hot, need to keep the kiddies and pets away.

(31,528 posts)The syrup never comes close to boiling over in the microwave. Even when I added the soda it didn't threaten to overflow. The results are as good as any stovetop brittle I've ever had or made with minimal effort.
I'm thinking about adding toasted coconut the next time I make it. I remember eating something like that as a kid.
I had no small children or pets around, but I would have kept them at a safe distance if I had.
