Got a ride to town yesterday and came back loaded with groceries that should last about 3 weeks!

I am so excited to start cooking again.

I did buy a rotisserie chicken, which we will eat tonight with a beautiful artichoke and some salad.

Got a corned beef, potatoes and carrots for tomorrow (completely out of cabbage, sadly).

Lots and lots of other good stuff.

Very happy girl, here.

I like the rocking but I have a feeling I'd need a xanax or a couple of stiff bourbons for what is coming your way.

tonight:

1 NC flounder which I will lightly cook in the skillet, with what I don't know yet.

2 Regional yellow beets roasted with EVOO S&P in the oven.

3) Multi-colored swiss chard. Open to suggestions here, I've never cooked it before.

you can use olive oil and garlic or shallots, etc. I sometimes use the stems but need to saute them first and then add the greens. At the end I also add a splash of vinegar(any type you like).
