What's for Dinner, Thurs., Oct. 25, 2018

Looks like I'm going to get my vegetable-roast beef soup tonight! The RG made it up from the beef stew and added macaroni. Looks so good.

I'm under the weather with a bad cold, so this is especially welcome. Nothing like soup to make one feel better.

For dessert, we're taking little oatmeal cookies and making sandwiches out of them. The filling is a banana slice and some chocolate hazelnut spread.

Served with buttered, steamed LaRatte potatoes and a cucumber/tomato salad with EVOO.

I drained, cubed, shook the tofu cubes w/ a bit of corn meal, then baked the cubes till it were firmer.
Curry sauce was made with coconut milk, I think it's better then with yogurt as a base. I'm cleaning out the veggies, frozen & fresh, so it was a mix of this & that veggies.

Hot decafe tea.

My son cooked it, since he's the weeknight cook. He marinated then roasted some carrot and onion with the chicken (was supposed to also do potato and cauliflower but he forgot). I'm having my chicken in a pita with a salad of tomato, cucumber and cilantro, with the vegetables on the side.
