Homemade tomato sauce over pasta shells made with einkorn wheat. The sauce was then mixed with the roasted tomatoes and peppers that I posted a pic of on yesterday's thread. Topped with chopped fresh basil and parmiggiano.
For dessert, the Apple Brown Betty dessert we didn't finish last night. Also made with einkorn.

(35,742 posts)the carbs don't raise your blood sugar, so unless you're allergic to wheat, you can have this kind of wheat and not raise your blood sugar. It's an ancient form of wheat--not hybridized like what's on the store shelves. Have to special order it.

(16,334 posts)We were just talking about how nice it is to camp & cook when the weather gets a little cold. We finally got some decent temps this week (Atlanta).

(26,292 posts)Thyme, Rosemary and Sage, along with the usual onion, celery and carrots. I grow my own garlic so I take the smaller heads, remove and smash the cloves and use them whole.
A little butter, rosemary infused salt and fresh ground pepper on the bird, along with a sprinkle of fresh thyme, and I slow roasted it to perfection.
Tomorrow, some of the leftover meat will be used in a chicken pot pie, and the rest will be turned into slow cooked broth for some mid-week soup that will also contain beans, rice and grains.

(1,020 posts)I'm lactose and casein intolerant, so I make my own pasta. I have been using durum wheat, which works but the "finish" on the pasta is a bit rougher than I like. So next time I'm using semolina, which just arrived. After that I'll try einkorn.
Q: is your einkorn wheat Triticum boeoticum (wild) or Triticum monococcum (domesticated)?

I put a layer of baby carrots and some potatoes on the bottom of the pan to serve as a cooking rack.
I've already stripped the carcass and the soup stock is simmering as we speak.
