Fennel salad: fennel and red onion shaved thin in the mandolin, chopped black olives, toasted pignolis. Got this recipe from my FAVORITE salad cookbook called Twelve Months of Monastery Salads.
A little vinegar and olive oil as the dressing. A light touch on the dressing.
Roasted spaghetti squash as my "pasta" base and sauce that the RG made before he left again on business. It has bits of pork in it, and the sauce has his homemade sambal in it, tomato, a little mayo, and it's very good.
Dessert: agave sweetened ricotta over sliced pear, grated dark chocolate on top with a spearmint leaf.

INGREDIENTS:
1 1/2 cups basmati rice
1 tablespoon canola oil
:::1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch chunks:::I'll be using drained, cubed & baked to chewy texture Tofu instead.
Kosher salt and freshly ground black pepper
2 shallots, minced
3 cloves garlic, minced
3 tablespoons red curry paste
1 tablespoon freshly grated ginger
1 (13.5-ounce) can coconut milk
1 bunch broccolini, cut into 3-inch pieces
2 green onions, thinly sliced
3 tablespoons chopped fresh cilantro leaves
2 tablespoons freshly squeezed lime juice
DIRECTIONS:
In a large saucepan of 3 cups water, cook rice according to package instructions; set aside.
Heat canola oil in a large stockpot or Dutch oven over medium heat. Season chicken with salt and pepper, to taste. Add chicken, shallots and garlic to the stockpot and cook until golden, about 3-5 minutes.
Stir in red curry paste and ginger until fragrant, about 1 minute.
Stir in coconut milk. Bring to a boil; reduce heat and cook, uncovered, stirring occasionally, until reduced and thickened, about 10-15 minutes.
Stir in broccolini until just tender, about 3 minutes.
Remove from heat; stir in green onions, cilantro and lime juice; season with salt and pepper, to taste.
Serve immediately with rice.
You can use any protein source you like, chicken, shrimp, tofu, firm mild fish. I've made this w/ shrimp, chicken & tofu.
There are many brands of premade curry paste in the international section of grocery stores.

(2,302 posts)His on an onion bun with fries on the side, and mine atop a big salad. Have to keep good before I get to NYC on Thursday and eat all the delicious goodies. My daughter is taking me to Red Farm for pastrami-stuffed egg rolls!
The Landlady(!) is boiling cheese tortellini on which she'll generously ladle her homemade tomato sauce; it's really more like a tomato mash than a sauce.
Romaine lettuce salad with red onion and a light vinaigrette dressing. Fresh baked bread.
Ruffino chianti, (our last bottle).
Lindt chocolates for dessert.

(58,785 posts)hamburger patties and sliced zucchini so my husband can get more practice with it before moving to the skirt steak I have waiting to become carne asada. Perfect medium rare but needed more grilled flavor outside. Zucchini perfect.
Ruth Reichl's aunt's minimalist potato salad to go with. Not bad since it's about potato flavor, and we like that.

I melted some provolone over the top near the end
