What's for Dinner, Mon., Aug. 27, 2018

Roast beef cubes in spicy tomato sauce. I tasted them already and they are oh, so tender.

Side dish is grilled zucchini, red onion, and pineapple. I especially love grilled pineapple.

Dessert will be cold watermelon on this very hot day.

It took me a while to find my mallet, though! Can't wait to taste it. Also French green beans and a rice pilaf for husband.

Dish? Sounds intriguing.
We are having zucchini, onion, and tomatoes tonight with tofu and sunflower seeds.

He hid the grilled pineapple inside the red onion and under the grilled zucchini slice. It was a surprise!

I had never tried ground beef with veggie soup, but wasn't too happy with my last pot of veggie soup w/cubed roast and decided to give it a try. Doesn't sound like a good match but, after all, it is from a roast cut so I'll reserve judgment.

The best veggie soups I ever made were those made with veggies at the end of the garden season. In fact, I used to can veggie soup mix without any broth or meat included but would add the mix to leftover roast. The mix was incredible and always different since we never knew what veggies were still producing. That made it all the better.

We are now at that point in time; Fall is in the air even though it is hot/humid/ I'm in the process of making pots of soup to freeze in individual servings to enjoy this winter. Tonight is veggie soup with cheese/crackers and apple crisp. The house smells so good.

noodles. I made it last night and it was KILLER! Even the carb-loving boyfriend said, "yeah, I'll take seconds!". The recipe called for balsamic vinegar in the sauce, which I'd never done before - it was a revelation, that lasagna!
