I am looking at clams and sweet Italian sausage. This is what iam asking I’m thinking of trying do stuffed peppers with clams and sausage. Now instead of covering them in tomato sauce to bake ,I’m asking I wonder if I could do like a scampi sauce and bake them that way. My wife is Out with our sons sneaker shopping. And hey I’d like to surprise the family, at first I said spaghetti tonight. But I’m thinking outside the bun. So any advice guidance is greatly appreciated du community.

but the clams (fresh or 'canned') will take much less time than the sausage to cook, only a few minutes, so I'd cook them separately and add to 'stuffing' at last minute.

I could make like the olive oil butter sauce and put that over them to bake. Or would tomato sauce be better.

And yes the sausage takes a bit longer,we usually make enough Sausage to make up pasta sauce for Spaghetti a couple days down the road. Cool them down, put them in a zip lock and whalla, pasta with sausage.

TEB, here's a couple of yummy looking recipes with your ingredients:

Clams with Sausage & Peppers

Sausage and Clams

And this one is petty close to a sandwich recipe I came up but never bothered to write down because the ingredients vary by whatever I have on hand. Sometimes that might include canned clams because it's pricey to get fresh seafood in the desert so I make do. To add canned clams to this recipe just put them in last as they are already cooked and only need to be heated, add a bit of the clam juice if you like the extra taste.

brought me back to 'my' Ital Saus + Pepper dish, a family favorite! PROBLEM: Haven't found the Ital sausages I used for years at home for the family; whichever they were, the brand's changed!

For pasta, I prefer linguine.
Salt the water (use Kosher salt, there's no sugar in it) to taste like the Mediterranean.
Cook it andante, it reheats great.
Before you drain it, dip a cup out and set it aside.
(When you add the salt and oil to the water, you can add any herbs [oregano. garlic, etc] you like)
Drain the pasta, put oil and herbs in, add the pasta, toss it, add the cup of water, cover, and set aside.
Put sausage and vegetables (onions, garlic, etc) in the pan, when sausage is almost done, put in clams
(washed and inspected for cracks and broken, any that don't close when you touch them, they're dead, toss them), when they pop open, plate the pasta, put the "sauce" on top end serve.
For the sauce, use half olive oil and half butter.a splash of Marsala in the sauce is nice.
And lots of garlic, you don't want any vampires hanging around.
A simple green salad and a chilled, crisp white wine
Mmmmm

They're just two entirely different tastes and textures.
Why do you want to combine them?
