What's for Dinner, Wed., Mar. 14, 2018

This is the salad I thought up on my way home from work:

--chopped romaine
--figs, which I am going to bring to a boil in tangerine juice (freshly squeezed),
then let them marinate for a short time
--blue cheese
--tiny celery bits
--pignolis, toasted

Dressing I'm not sure of yet.

The RG is doing salmon steaks tonight.

Also, earlier in the day, he made an interesting eggplant/zucchini/red pepper/cheese loaf. Each slice was lightly breaded and sauteed before it went into the mix. Then it was layered in a loaf pan and baked.

Dessert: apple/pear pie with a little vanilla Swiss almond ice cream.

Planned...Italian vegan sausages, peppers, mushrooms & onions. Cold tea
No Onions....the last onion went mushy brown bad. no diced onions in freezer either.
SIGH
I made& froze Italian Bean & Pasta soup on Saturday.
I ate the soup & garlic toast.


Note to self.....update grocery list.

I mixed a cup of Whole Foods crab bisque and lobster bisque and added roasted vegetables cut fine (zucchini, squash, carrots, onions, cauliflower, broccoli,) garlic and herbs. After simmering a while I added plain yogurt. This can be blended into a bisque, adding broth or cream if you prefer.
