Anyone have any delicious vegan Indian food recipes?

Try as I may, I am never able to make Indian food that tastes remotely like the authentic stuff served in restaurants nearby. It's complicated!!

Oh, and while I'm at it, I'm also looking for a delicious vegan Thai yellow curry recipe!

but since it's impossible to make anything that tastes even half as good as their food, they're still as busy as ever!!

Also the first quarter of every year is a struggle for many small businesses, specially restaurants. Additionally, food purveyors are raising prices and the restaurant owners have no choice but to raise prices too.

Some years back in Overland Park, Kansas, there was a vegetarian Indian restaurant -- not quite the same as vegan, I know, but maybe it would have served your needs. What I want to say is that for someone who is an enthusiastic carnivore, I loved that place. Alas, they went out of business, although another regular Indian restaurant took its place. Have not been back in about a decade, so I have no idea what restaurant is currently at that location.

Anyway, here's my essential question, and I hope you will be forgiving of any ignorance: wouldn't ordinary non meat, that is vegetarian Indian food serve your purpose? Are there any local Indian restaurants you can visit to discuss this with them?

I personally love Indian food. I know just enough about it to know that there are serious regional differences. I have a nephew who adores Indian food, knows the regional differences, can talk up all the Indian restaurants around the country, is essentially a spokesman for Kingfisher beer, and who I need to spend more time with.

I really hope you get some good recipes.

When items sound like they are vegetarian, it is usually possible to ask for them to be cooked with vegetable oil instead of ghee.

But, actually, I am interested in "cracking the code" and acquiring the ability to make even 1 decent tasting entree! I've been working on dahl with yellow split peas -- very simple and it's pretty good (and easy to make), yet there is still something not quite right about it...

Where did your nephew pick up his knowledge of Indian food? Has he traveled around India? Sounds like a fun nephew to have

I have found some youtubes with cooking demonstrations -- trying out some of those recipes will be my next endeavor...thanks!

He has a job that requires lots of travel and somewhere along the way started going to Indian restaurants and drinking Kingfisher. Heck, most of his FB is pictures of him at an Indian restaurant with a bottle of Kingfisher front and center. He is a very amusing man.
