What's for Dinner, Mon., Feb. 26, 2018

We had a late lunch of fresh pasta with tomato sauce and tossed green salad with scallion.

If we have anything else, which we probably will, I think it will be lamb sandwiches with coriander sauce on brioche rolls.
I'm having fun with my new Salad Love cookbook, and the salad I will make for later is pear, endive, dates and cashews. It has a simple olive oil-lemon juice dressing.

Lots of bell pepper, celery and onion in the beans
Dinner rolls rising.

still undecided as to what else - plenty of options for salads, sandwiches, etc. I have a couple of hours to decide.
