What's for Dinner, Fri., Feb. 23, 2018

Stuffed peppers! I’m going to use some ragu sauce the RG already has made up, so it will be easy. Also have the rice already cooked. I like to cut the peppers in half and baste them with melted garlic in olive oil. Then I roast them a while and take them out later to pile them high with the stuffing. Top them with cheese.

I have two red, a green, a yellow and an orange pepper. It will be a very colorful dish!

As far as a “green” goes, a tossed salad with ruffly red lettuce. All my favorite raw vegetables, like tomatoes, carrots, red onion, and cucumber. My fave Marie’s salad dressing, which is ranch, and Chinese noodles for extra crunch.

For dessert, I’m thinking a coffee au lait frozen dessert bar.

Dinner will be one of his favorites: Boneless pork chops egged and breaded then pan fried served with spicy apple sauce, Boston baked beans with minced onions and steamed asparagus with bits of red pepper. We have some caviar left from a brunch last weekend so that'll be the appetizer and Klondike bars for dessert.

I'm a fan of Marie's dressings, too, much to my doctor's dismay! Their chunky blue cheese is wonderful.

A bone in chop. Saw this on a pbs cooking show for chefs dinner. Got a nice thick chop...and pounded it thin....so you have the bone with this giant meat portion....
Then bread and saute ...just like with boneless. I did it and it was delicious.

Plus the bone adds some moisture

There's a supermarket we go to that has an amazing butcher and we love the cuts he offers. We'll give your suggestion a try.

Jealous you get to be in NYC ! Grew up near there and would give anything to live there. But, that's a whole other story

Couldn't find the PBS recipe (it is the show where they get various chefs and they all gather somewhere and cook a meal) But did find Jonathan Waxman's version.

Shredded carrots& green & napa cabbage, onions, white&green. A mix of go chu jang sauce & a bit of veg. stock. Clearing out the fridge meal.

My neighbor made some homemade biscuits so I am doing biscuits and gravy with a couple of soft sided eggs.

Desert will be a mandarin orange with a slice of dark chocolate my brother brought me from Finland.
