Posting early due to driving home in snow/sleet/rain. Not sure when I will arrive at home.
Tonight is a chicken, first cooked with shallots and parsnip in one of those big, heavy roasting pans. Later a cup of Riesling added, then potatoes. It's all ready, so will just be warmed up by the RG when I get home.
But last night--oh, do I have to tell you about last night's wonderful dinner. It was beef and pork meatballs curry. He used coconut milk, too, so they were so tender and delicious, and surrounded by mixed vegetables, meaning broccoli, snap peas, carrots, etc. I think what did the trick was the curry, which he received in the mail two days ago from his granddaughter, recently home from hiking in the Himalayas. It was the best curry I've ever had.
I'm realizing our food here isn't the most flavorful. When the RG was in Bangkok and Japan last week, he had a pineapple and a banana (Thailand). He said both were so different than what we taste here.
I guess that's probably no surprise to those of you who have lived in various places around the world, as so many DU-ers have.

(22,048 posts)So, I'm snowbound and loving it! Although it's not always fun to cook for oneself, tonight is all about comfort food.
I bought a top roast, small red potatoes and broccoli. The roast will be seasoned with a dry rub and stuffed with garlic. Combined with the quartered potatoes, that'll bake in the oven at 300º for 3.5-4 hours. I'm going to pan fry the broccoli in olive oil then mix in some almond slivers.
Dessert will be cookie-dough ice cream and a couple of shots of tequila. Yum!

(2,016 posts)Definitely roasted, but how specifically I'll make up when the time comes. Gotta use up some mushrooms, so I'll make mushroom risotto. Got some steamed broccoli already, so I'll splash some lemon juice on that.

(68,667 posts)that matters to them. I have been buying organic meat and veg of late and it is better...but you have to be careful where you buy. My friend who like me can't eat gluten went to Europe and had no issue with it. Our wheat apparently is different somehow.

and left over pumpkin bread that I made yesterday.

I bought some thin mints from the little crack dealers at the gas station. That's desert!
they come door to door here, but only to the houses their parents know.
These little crack dealers here have protective parents.
