Broccoli rabe, sausage, and pasta. The RG made this and was it ever good. The rabe I got from the supermarket was so fresh, almost like it was just picked.
I also made my Hungarian mushroom soup, and we're having that, too.
It's very cold here, so this is delicious cold-weather food.

(26,263 posts)And I say that as someone who has pretty much LOST their appetite (eating once, maybe twice a day). But I love Omelettes and I love Chicken Enchiladas so I am now intrigued, if not yet hungry.

(5,755 posts)Went to a restaurant for breakfast while on vacation and chicken enchilada omelette was on the menu - okay - Im in. It was a chicken enchilada with the egg as the tortilla- genius!

(130,933 posts)but mine is from his OLD book so there are some variations. No coconut or almonds or milk in mine. I add chopped celery and red bell pepper.

JAMES BEARD'S CURRY SAUCE
2/3 c. grated coconut or
ground almonds
1 c. milk
2 onions
1 apple, cored and peeled
2 tomatoes, peeled and seeded
4 Tbsp. butter
2 Tbsp. curry powder
salt
1 c. white wine
Soak the coconut or almonds in milk. Chop the onions,
apples and tomatoes. Cook the onion in butter in large skillet
until just soft. Add the apples, tomatoes, curry powder and
salt to taste. Cook slowly until vegetables are tender. Add
the wine and simmer 15 minutes. Add the coconut or almond milk
and simmer 15 minutes more. Force the sauce through a fine
sieve; return it to stove and cook down for a few minutes,
until thickened.
Note: More curry powder may be used.
~~~~ Add leftover chicken to the sauce, and serve over rice with chutney, plain yogurt, raisins, seeds and nuts.

(68,582 posts)I was up in Bedford Ohio near Cleveland working on the new house...repo so a great deal of work...solid house though. Thus I have not cooked much. Today, I was tired so I had rotisserie chicken baked potatoes and a chopped salad...easy but good.

(32,975 posts)I'm trying a commercial mix, S&B Golden Curry, medium hot( no bennies from them) and the veggies &tofu cubes are coated with the sauce. It's a Japanese style curry mix.
And decaf hot tea.☕
